double chocolate mint cupcakes

these cupcakes are probably the most popular of all the cupcakes i make.  so many people love the combination of chocolate & mint and the pairing exists in lots of well-known pairings... after-eight, junior mints, mint chocolate chip ice cream, ovation {those used to be a christmas staple in my house growing up}, those addictive crunchy girl guide cookies... none of which are vegan i might add.  i tend to be more of a vanilla cake gal, but my double chocolate mint cupcakes are the ones that get requested the most, especially by non-vegans.

what can i say?  there's just something about chocolate and mint...

{double chocolate mint}

double chocolate mint cupcakes based on the basic chocolate cupcake in VCTOTW

makes one dozen
1 cup non-dairy milk {i used almond}
1 tbsp apple cider vinegar
1/3 cup sunflower or canola oil
3/4 cup organic cane sugar
1 tsp pure vanilla extract
1 1/2 tsp pure mint extract {or peppermint, spearmint, etc.}
1 cup organic all purpose flour
1/3 cup + 2 tbsp cocoa
3/4 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt

preheat your oven to 350f.  mix together the almond milk and cider vinegar in a large bowl and set aside to curdle a few minutes.  add in the oil, sugar and extracts and mix until well combined.  into a separate bowl sift and combine the dry ingredients.   add the dry ingredients to the wet and mix until the batter is pretty smooth, but don't overmix it either.  {unless instead of cupcakes, you'd rather double chocolate mint hockey pucks.}

spoon the batter into a cupcake tin filled with liners and bake for 18-20 minutes, or until a toothpick comes out clean.  allow the cupcakes to cool completely before icing with chocolate mint buttercream.

vegan chocolate mint buttercream
1/2 cup earth balance vegan margarine
3- 3 1/2 cups icing sugar
1/2 cup cocoa
1-2 tsp pure mint extract {depending on how minty you like things}
2 tsp almond milk, and more as needed

whip the earth balance and incorporate the mint extract.  add in the cocoa powder, followed by the sugar and almond milk a bit at a time, mixing as you go along until you reach a consistency and flavour you're happy with.  ice your fully cooled cupcakes and if you like with fresh mint.

  10. Good internet ettiquette includes citing where the recipe comes from. Anyone who bakes Isa Moskowitz's and Terry Romero's cupcakes, knows this is a Vegan Cupcakes Takes Over The World recipe. It's ok to add some flavoring, but at least please give credit where it's due. It's plagorism otherwise.
